  • 3 lbs. Summerfield Farms 100% grass-fed & grass-finished marrow bones
  • 1 lb. Summerfield Farms 100% grass-fed & grass-finished knuckle bones
  • 2 medium Faucette Farms potatoes cut into 2-inch pieces
  • 2 unpeeled Faucette Farms carrots cut into 2-inch pieces
  • 1 medium Faucette Farms onion quartered
  • 1 garlic head halved crosswise
  • 2 celery stalks cut into 2-in. pieces
  • 2 bay leaves
  • 2 tbsp. black pepper
  • 1 tbsp. apple cider vinegar


  • Preheat oven to 450 degrees Fahrenheit
  • Chop up potatoes, carrots, onion, and garlic and set aside.
  • Place beef bones, chopped potatoes, carrots, onion, and garlic on a roasting pan or rimmed baking sheet and roast in the oven for 20 minutes.
  • Toss everything around in the pan and continue to roast until deeply browned, about 20 minutes more.
  • Fill a large (at least 6-quart) stockpot with 12 cups of water (filtered).
  • Add the chopped celery, bay leaves, peppercorns, and vinegar to the stockpot.
  • To enhance the flavor of your broth, scrape the roasted bones and vegetables into the pot, along with any remaining juices. Add more water to ensure that the bones and vegetables are fully submerged.
  • To make a flavorful broth, cover the pot and bring it to a gentle boil, then reduce the heat to a very low simmer. Leave the lid slightly ajar and skim the foam and excess fat occasionally.
  • It's best to simmer the broth for at least 8 hours but up to 24 hours on the stovetop to allow the flavors to develop fully. Ensure the bones and vegetables are fully submerged by adding more water. Alternatively, you can use a slow cooker on low for the same time.
  • Remove the pot from the heat and let it cool slightly. Strain broth using a fine mesh sieve and discard bones and vegetables. Let your broth cool until barely warm, then refrigerate in smaller containers overnight. Remove solidified fat from the top of the chilled broth before using.
