There’s something about a pot of chili simmering on the stove that instantly makes a house feel warm and welcoming. Our Summerfield Farms Savory Chili is the recipe we reach for on cool evenings, game days, and whenever we need a meal that feeds a crowd with ease.

Made with our 100% grass-fed and grass-finished ancestral blend, savory sausage, and a rich tomato base, this chili simmers low and slow with lager beer, beef bone broth, and just enough sweetness to round everything out. The result is hearty, balanced, and deeply satisfying — chili done the Summerfield Farms way.

Simple ingredients. Quality beef. Time to let the flavors develop. That’s all it takes.

WHY THE ANCESTRAL BLEND?

Why This Cut Works Best for Chili

Our ancestral blend is ideal for chili because it delivers depth, richness, and full-bodied beef flavor. Made from a thoughtfully balanced mix of premium cuts, it brings more character than standard ground beef while still cooking evenly and tenderly.

When paired with savory sausage, it creates layers of flavor that hold up beautifully during a long simmer.

As with all our beef, it comes from 100% grass-fed and grass-finished cattle, raised without shortcuts. That means clean ingredients, robust flavor, and beef you can feel good about serving your family.

WHAT MAKES GRASS-FED DIFFERENT?

Grass-fed and grass-finished beef offers a deeper, more nuanced flavor — especially in slow-simmered recipes like chili. Because the ingredients are simple, the quality of the beef truly matters.

You’ll taste:

  • Richer, cleaner beef flavor

  • A balanced finish without heaviness

  • A hearty texture that holds up during long cooking times

When you start with quality, you don’t need to overcomplicate the recipe.

Ingredients

  • 1 lb Summerfield Farms 100% Grass-Fed & Grass-Finished Ancestral Blend
  • 1 lb ground sausage
  • 3 tablespoons chili powder
  • 1 medium onion diced
  • 2 tablespoons garlic minced
  • 4 oz tomato paste
  • 16 oz can crushed tomatoes
  • 1 cup Summerfield Farms BBQ Sauce
  • 12 oz lager beer
  • 1 cup Summerfield Farms 100% Grass-Fed & Grass-Finished Beef Bone Broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey or sugar
  • 2 15 oz cans dark red kidney beans rinsed and drained
  • 1 15 oz can black beans rinsed and drained
  • Salt and pepper to taste

Instructions

  • In an extra-large stockpot or cast-iron skillet, brown the ancestral blend and sausage over medium-high heat until fully cooked.
  • Add the diced onion and cook until softened, about 4–5 minutes. Lower heat to medium and add the garlic, stirring for 30 seconds until fragrant.
  • Stir in chili powder, crushed tomatoes, tomato paste, and BBQ sauce. Scrape up any browned bits from the bottom of the pot. Cook for 15 minutes, stirring often.
  • Add the beer, beef bone broth, Worcestershire sauce, balsamic vinegar, and honey. Stir well to combine.
  • Simmer uncovered for about 1½ hours, stirring frequently. If the chili thickens too much, add water in ¼-cup increments as needed.
  • Stir in the beans and continue cooking for another 30 minutes. Taste and adjust seasoning with salt and pepper.
  • Serve warm and finish with your favorite toppings — sour cream, scallions, grated cheese, jalapeños, hot sauce, or a side of warm cornbread.

Frequently Asked Questions
1. Can I make this chili in a slow cooker?
Yes. Brown the meat and sauté the onion and garlic first, then transfer everything to a slow cooker and cook on low for 6–8 hours.
2. Can I freeze this grass-fed chili?
Absolutely. Let it cool completely, then freeze in airtight containers for up to 3 months.
3. What beer works best?
A mild lager works well because it adds depth without overpowering the beef flavor.
4. Can I make this without beans?
Yes. Simply omit the beans and reduce simmer time slightly for a thicker, meat-forward chili.
